Unless you have advanced Parkinson’s you should be able to use a stone just fine regardless or bolster.
I can’t think of how a full bolster would make sharpening harder unless the person insists on using a manual/electronic pull-through, and can’t sharpen the blade all the way to the bolster because it won’t fit in the slot.

My wife and I eat basically the same 4 meals all the time, mostly because our kitchen is laughably small so all food prep is a nightmare.
But I guess if I premade stuff and froze it we could expand our menu a bit.
