This is my first chicken teriyaki. Any tips on how to improve? Tasted good, bf loved it, but I can do much better.

Used soy sauce, rice vinegar, honey, pineapple juice, grated ginger, and some black pepper. Marinated 3 hours.

The sear sucks, you probably overcrowded the pan

The pieces are too big, use boneless skinless thighs and cut them into bite size pieces

The sauce is too thin, use a cornstarch slurry to thicken it

I used boneless skinless thighs, and I fried them in two batches. I agree they could've been way more browned. The oven is also shit in my apartment. Plus, he was hungry and I didn't wanna wait I guess.

Chicken is the most disgusting meat. You throw away chicken the trash stinks like hell. The same thing is happening inside your body. Chicken is comprised of many ultralong chin oxidative fatty acids. They become rancid outside and in and result in inflation. Unless you're poor, you shouldn't eat chicken period. Stick to beef or pork.

Flatten out chicken thighs to even thickness, make a mixture of soy sauce, mirin, sake, garlic, and ginger. Marinate the chicken overnight. Then grill it. Reduce sauce to thicken and can use that on the cooked chicken.

Your marinade was fine. I'm not a fan of honey or pineapple but it's a good combo if you enjoy them.

Main problem is method of cooking. Grilling is optimal, otherwise broil the chicken in the oven. Saucepan isn't gonna come out well for teriyaki.

Any way to get good teriyaki with a pan? If I marinade not only will the wetness inhibit browning, but the sugars will bond with the pan and become a nightmare to clean off. I got burned by one bulgogi recipe this way, never again.
