What's not to love? How do you like your eggs? Benedicts or over medium on a potato skillet for me. Every time mom made a cassarole she chopped up a couple of hard-boiled eggs into it.

I like the yolk runny but if any of the white is uncooked I wont eat it. Fried or poached is a bitch, and I generally avoid them if someone else is doing the cooking.

I hate undercooked egg white too although I'll still eat it. Just doesn't have a good texture like runny yolk does.

I've really been enjoying beans with over easy eggs lately for some reason though. Seems like the flavor and texture just works well together.

There's no reason they have to be just breakfast food. Egg salad is pretty good for lunch, and sometimes I'll have an omelette or scrambled eggs for dinner. Good source of fat and protein and easy to prepare.

I think pic related is typically breakfast where it's served but I enjoy eating it for dinner. For some reason beans and eggs just seem to taste really good together.

Been eating a lot of over easy eggs lately. Usually spinach and a slice of toast alongside. I'd have more benedict but I stop craving them before I can finish off the english muffins.
I dislike hard boiled eggs, and despise deviled eggs. Those belong in the trash.
I always consider including hard boiled eggs into my meals, but any time I eat them I have the same revulsion over and over.
