Made some sweet and spicy tofu, came out pretty good although even after coating tofu with corn starch and baking for 20 minutes it didn't firm up. Any tips for making nice crispy tofu? I buy extra firm and press it with a pot of water for 20 min.

panfry it without corn starch, just dry the tofu really well.

you can also coat it in corn starch, or a corn starch slurry, and shallow fry for a more dense crust.

i recommend saucing after rather than marinating personally.

for crispy tofu i don't coat it with cornstarch or anything, just cut into cubes or fingers, heat a pan on medium high/high, add oil, add tofu (it'll go shhhhh), spread out so each piece has a side touching the pan. now let it sit for like 5 minutes. then flip em all over and let sit another 2 or 3 mins. they should be crispy on two sides now which should be plenty

Another trick for tofu after you press it, you can put it in the freezer. Will change the texture and help absorb more flavor.

To the other replies I would add:

Freeze the tofu and then defrost it when you want to cook it. I’m not sure about the science behind this, but it results in a former, chewier texture overall.

Did you use any oil when baking? It won't really crisp up otherwise. Just put a little oil on your baking sheet and coat it, then flip halfway through cooking. But you'll probably have better luck just panfrying.

Looks delicious! Try freezing and thawing in the packaging, draining excess moisture and then marinating with a marinade of your choice for a couple hours. After that add flour and corn starch and it will form a sort of batter around the tofu, then deep fry. You could maybe try and bake it, but spray with oil first.

Cut the tofu into strips/cubes before pressing. Coat with a little oil and starch, than bake. Add sauce later, as marinated tofu doesn't get as crispy. If you care more about flavor than crispiness, than freezing is the way to go.
