Lazy meal I made a long time back.

I moved and now I can't find kidneys. Tongue and tripe are available though. Fuck tripe, it tastes like you walked into a barn with your mouth open no matter how you cook it or whether it's book tripe, honeycomb tripe, bleached or not.

I tried liver for the first time today. Strained and rinsed it, then cooked up a small piece plain. The texture was kinda weirdly chalky, it didn't smell bad but the bitter taste and lingering aftertaste really didn't do it for me. After, I chopped some up into small pieces and tried cooking it into a ground beef bowl with plenty of seasoning, but after hitting a couple big bites of liver that bad aftertaste built up so much it started triggering my gag reflex and I couldn't finish the meal.

I really want to eat more organs, but how do I get past this? Is there any way to prevent that aftertaste, or is there anything I should look for when buying liver? I just grabbed what was in the beef fridge at Kroger.

When me and a mate went to Barcelona we bought cheap as fuck liver from their fancy market and used it to cook genuinely one of the tastiest meals I had there. And definitely the cheapest one, too. Liver is insanely under-rated. Also the liver-seller insulted my friend which was funny lol.

Raw liver is pretty good. Not delicious like a seared ribeye, but much better than any cooked liver. If you want to eat liver just eat it raw. You can just swallow slices too if you don't like to chew it. It's very easy to eat and has a mild flavour.

Buy frozen calf liver as it has a milder taste, thaw the slices and refreeze the ones you won't use. Gently pat dry, and I mean gently as it's a gently sticky and can rip, and fry at very high heat on both sides. They're very easy to overcook. We're talking higher than you would fry a steak at. Try your medium-rare to medium calf liver.

It should not have tasted bitter but more... metallic? Hard to describe. Try it with fruit, fruit sauce, or young red wine.

Beef liver is pretty good if you don't fuck it up, which most people do, hence the reputation.
Chicken livers are fine but I'm more liable to fish with them than eat them.
Like every "weird" food you just have to do it right.
Escargot is just helix snails, if you dry fried them and ate them straight up they'd be chewy and bland.
If you cook it right it's a delicacy.

The milk soak is key. Especially if you buy beef liver, but even with calf liver you have to soak it in milk, I usually do overnight but at least a few hours. 1/4c brandy/cognac or you can use like apple juice or cider
2c cream
3/4 # butter
pinch fresh nutmeg
salt and pepper
8 yolks

put everything but the cream and butter in a robocoup until its smooth, then start feeding in butter a tablespoon at a time. if your mixture curdles its because your stuff is too cold. the easiest way to make this is get your livers, butter and yolks to room temperature before processing. after you got all the butter in pass it through a strainer. whisk in the 2c of cream, pour the mix into a terrine pan. hhave your water bath almost boiling. put the terrine into the hot water bath and then into a 275f oven. it takes about and hour and fifteen minutes. test it with a toothpick like how you test brownies

Wild game usually is fine if you don't fuck up cooking/butchering.
Predators (like coyotes) have a bad rep for 1. being like dogs, and 2. having a fuckload of parasides, so you have to cook the shit out of the meat and season it to hell and back. Eating a liver of a predator isn't really advisable, but I guess if you REALLY wanted one and you don't mind eating a shoe, go for it maybe?
