Staffordshire oatcakes, heres a recipe.

225g fine oatmeal
225g wholewheat or plain flour
1tsp salt
15g yeast
450ml warm milk
450ml warm water
1tsp sugar

Mix the water and milk together.
Seperately, mix the flour, oatmeal and salt.
Dissolve the yeast with a little warm liquid and add the sugar. Allow the mixture to become frothy.
Mix the dry ingredients with the yeast liquid to make a batter adding the remainder of the warm liquid.
Cover the batter with a clean cloth and leave in a warm place for about an hour.
Pour out enough batter on a well-greased griddle to make an oatcake of about 22cm.
Fry for 2-3 minutes then flip over for 2-3 minutes more. Should be browned but not too crispy as need to be folded or rolled around your filling.
They freeze well and can be reheated in pan, grill or microwave once defrosted.

Nah, it's a heaping of newf-style dressing (stuffing) instead of a few cheese curds. The combination is far tastier and I'm a man who loves poutine. The gravy is usually different too, as it's a dish that came about from turkey dinner leftovers. We don't ever call it a poutine because it's not inspired by it or a variant of it, most newfoundlanders back in the day wouldn't have been aware of much out further than Nova Scotia. It's not like Quebec invented fries and gravy anyway, that's a universal no-brainer combo.

Hot turkey sandwich is another similar leftovers comfy food. Slice of bread on plate, leftover turkey shreds on top, dressing piled over that, pour gravy over it, one more slice of bread on top, pour hot gravy over that too. Eat with fork and knife.
