Theres actually 2 people who raise and eat ducks, there's me, and there's chicken cake anon. I cannot identify the part with 100% certainty, it might be part of the throat where the neck and sternum meet. But idk because I usually have no issue removing that part. Might be sloppy butchery or they made the duck butchering in a certain style that is sometimes used for peking duck where they remove the organs from under the wing as opposed to the traditional way where you cut a slit in the chest cavity and around the cloaca to efficiently and cleanly remove all the organs and intestines.
