Culley's "Fuck Me That's Hot Sauce" is not that hot despite the name and quite flavorful. You can't miss garlic, coconut and it is overall quite fruity. "Brutality" on the other hand is more pain in the ass, but still quite tasty. "Bomb" is dumb hot, but I believe there is something for anyone in their collection

the black sauce is something magic too. the first time i bought one i liked how it tasted but couldn't figure out wtf it would be good for. probably nice with bean dishes and such, but otherwise i was lost; not gonna be great on wings or veggies, not even that good on pizza.

but then one day i doused my steak with it - and holy shit. i've never believed in hot sauce on steak but that rich bourbony flavour of the black sauce does something to a steak that i've never tasted before. if you haven't put it on a grilled piece of beef please you must try it

Those two are pretty much the most unique of the El Yucateco range but I agree with the other anon that the green habanero is probably their best standard fare. If you want another unique sauce that doesn't taste like other sauces the Caribbean sauce fits the bill. It's their second hottest but not so hot that you can't enjoy the flavour. Idunno what exactly makes it "Caribbean" flavoured but it's absolutely delicious, I think it's made with carrot and lots of black pepper amongst other things. I would eat it on a spoon but that's just too much at once.
