hot sauce is usually just a vinegar based sauce made with fermented chilies. buffalo sauce is a sauce made using hot sauce and adding butter, and other ingredients depending on the recipe/who you ask.

He just likes that image. At its simplest, Buffalo (wing) sauce is Frank's or a similarly gummed/emulsified, lightly fermented tabasco-pepper sauce and butter in roughly equal amounts. You can make it from tabasco peppers if you give them a short lacto ferment and then blend with salt, vinegar, and some cornstarch, sugar-pectin-blend, agar, or xanthan gum, then blend that with butter.

the real question is there a difference between mild/spicy sauce and buffalo sauce, and the answer is all the fucking places in my town dont want to use real ingredients like butter and they want to add a ton of sugar, so basically that means I can only eat the shit on special occasions cause its basically junk food and not a real meal
