Plain grocery store ketchup is just very bland and watery flavored. It lacks a vinegary bite like a mustard or creamy texture like a mayonnaise. The only reason is tastes good on things like fries, corndogs, etc is they are already fatty and salty enough that they in effect season the ketchup. That said, if you spend a little more money and get a higher end chipotle ketchup or something similar, then that at least brings something to the table. But at that point, you might as well just get a BBQ sauce which is just a dressed up ketchup most of the time.

The organic ketchup I can buy here is pretty good, but costs too much. Not a fan of Heinz, Beauvais and such.

I've been making my own. Takes a while to cook since tomatos, but it only takes a couple of seconds to throw some passata, tomato paste, vinegar, sugar, etc. together

That's why I like ketchup, though. You have that sweet and cool contrast against the hot, savory hotdog/corndog/burger/nugget/fry. I have tried spicy ketchup and I didn't like it as much as normal ketchup. The sweetness and the lack of spice is the whole point. I make my own spicy relish and add that along with stone ground mustard to my hotdogs so I don't hate those flavors. I just think ketchup is king in it's own right. I put it on steak too. Store brand ketchup is fine too I don't get why people are ketchup snobs. I can't taste the difference. But I care about the difference in mustards, plain yellow is like the mild cheddar of mustard. Fine, but there are better options

ive got a working theory on something i like to call the American Mothersauces. a lot of them are condiments but are the base of great sauces in american cuisine. Ketchup i include in my working theory. Now ketchup on its own fuckin sucks, kinda like if somebody served you a plain bechamel. It is a building block though to make great sauces for american cuisine. My first suggestion would be to make your own ketchup. a classic tomato ketchup, understand what goes into it. Then try making some popular sauces with your homemade ketchup. Start with a BBQ sauce with your homemade ketchup, a fry sauce is a good one too (make the mayonaise from scratch thats another American Mothersauce i include in my theory. Then start substituting ingredients. Try making a plum ketchup, a tomatillo ketchup... get a some really cool interesting ketchups and then start building sauces off of those.

Ketchup is never something i like to eat plain other than with french fries, however, it is the foundation to so many great sauces in American Cuisine that i think there is really room for exploration to how we can modify the dope ass ketchup based sauces by modifying and understanding the ketchup itself.
