Why do recipes always call specifically for kosher salt instead of normal salt? What's so special about it?

if its coming from a chef it has to do with volume. table salt is finer so a pinch of salt is a lot harder to control than kosher salt. this has kind of trickled down into homecooking as most of the people that develop the recipes you find online or in cookbooks have some kind of experience in professional culinary where kosher salt is the standard. an adept cook will be able to control kosher salt better than finer table salts or sea salt/maldon salt. the former is a huge no no in cooking and the latter is usually used for finishing.

Literally nothing. Just know that kosher salt is big fluffy flakes so if you use normal salt, which is smaller granules that pack together more densely, you use half the amount the recipe asks for.

Literally never would buy fantsy pance salt, it's fucking salt.

The size and shape of the granules. If you use the same volume of table salt as kosher, the dish will end up over-salted. Kosher salt is really good for seasoning meat because the shape of the grains stick really well to the surface.
