I finally tried THE infamous topping on pizza today, and it's really good. It gives the pizza a nice splash of savoriness without fishy-ness or the extra grease of sausage. Why was it always portrayed as the icky option on pizzas in popular media for so long?

I know right? When you finely chop/mince the anchovy and cook it in a dish, it sort of dissolves away just leaving the flavor behind without compromising texture.

They are (non-organically) fermented in salt, similar to the way fish sauce is made. Rinsing does not remove nearly enough salt. Best to be used with salt-free tomato sauce. Most commercial places just have standard sauce with all pizzas, that's the mistake.

The reason anchovies have a negative stereotype as a pizza topping is because they're very salty.
I actually like them for that same reason, but the average person trying it will probably find the saltiness a little over the top.
I'm sure some pizza places go out of their way to make a lame, not so salty version of anchovy pizza but that kind of defeats the purpose of getting anchovy pizza.

In some parts of europe anchovies generally means sprats in a sugary tasting sauce. Its very disgusting.
