A Korean place opened up by me a few years ago in a local strp-mall. It was fairly authentic, even had a part of the restaurant where you could sit low, with a place cut out into the floor. I went there a few times and overall everything there was fantastic - especially this spicy pork belly meal they had that I adored.

The place was family run, not a chain, but they got a little greedy at some point and moved into a bigger building in the same lot after a Chinese buffet place closed down. And rather than staying a normal restaurant, they became a buffet/k-pot style place where you could cook on the table, etc. Which wouldn't have been a problem if literally, less than 3 minutes down the road was a bigger, more popular Korean place that did the same thing.

They went under around a year later, and now I'll never have that pork belly the same way again.

KFC Canada has so many lost items; The Crunch Wrap, the toasted wraps (not the twisters, the ones that got replaced but the flat bread), BBQ Big Crunch Stacker, they do extra crispy once in a blue moon, the old "nuclear" coleslaw, the original double down.

The original Memphis Chicken Sandwich at Boston Pizza. They still make it, but they don't include fried jalapenos anymore (which made the whole thing so good to begin with.)

I gotta say I really miss the buffet restaurant concept in general, esp salad bars. I used to love going to Victoria Station salad bar before my steak arrived. Gone. Virginia Beach had a good concept restaurant that I tried to go to when I blew through town, the "Grate Steak" where you stood around the big grill as if it were a bar, and made your own steak, grilling garlic bread yourself while you waited, or going to the salad bar, or baked potato topping bar.
Flattop grill in Arlington VA was fun like that too, assemble your own rice or noodle bowl toppings along a long bar then passing your bowl of ingredients to the chef at the end to cook on the flattop and deliver to you. From purple rice to egg noodles, steak to raw egg, great concept.
And thanks to covid, I'm very overdue going to the great salad bars at the rodizio and churrascaria restaurants. I'm in the mood for some hearts of palm salad or old fashioned waldorf or marinated tongue, and a punch bowl of chimmichurri to ladle over steak and sides alike. Always unique old world items at these places.

If you can't find kasseri or halloumi cheese and don't have a local greek store, do try Costco, you'll be surprised.
There is a cheese in the latino world, if that's easier to find for you, called queso para freir, which is "cheese for frying" and it's cut into slabs and pan fried naked (no need for the flouring step). The cheese develops a bubbled crispy crust without melting inside. I think it is the same texture of fresh greek cheeses but is calves milk, not sheep/goat, so is the copycat of halloumi. Firmer aged manchego is a good stand-in for sheep milk lovers, but you'd for sure want to flour it.
