Corned Beef Hash is fucking god tier stuff with hot sauce and eggs. I like it for making breakfast tacos and burritos quick by frying it up and adding in scrambled eggs on top. Its a great food for camping.
SPAM is good for making sandwiches and stir frys surprisingly enough. You HAVE to fry it real good though, its worthless without the golden brown sear just a block of salty fat.

You got to be careful because they're all salty as hell, but if you can deal with the complete lack of texture they make a great cheap substitute for more expensive meats, especially with sandwiches or pasta. Personally I prefer sausage though. Almost as cheap and usually comes with its own spice and texture.

SPAM is one of those things that I think is decent to have as a disaster/need something to eat before payday/camping situation. Its not something I would eat regularly, but it has its uses (Fried spam sandwiches, mixed with rice, etc).

Potted meat/deviled ham is dog food consistency and isn't horrible, but not something I would eat now as an adult. Never was a fan of canned corned beef hash. Its ok fresh, but not out of a can.

Pork shoulder and picnic ham are two completely different things
I said shoulder to refer to the front and rear location, didn't realize you thought ham was made from the pork shoulder cut, it isn't
Picnic ham and regular ham are the muscle below the shoulder that is attached to the leg
Picnic ham and regular ham are astonishingly similar in color, texture and flavor
You can also get similar meat from pig ankle bones, but it's harder to trim off and you only get small strips

Just so you know the front quarter of the pig has an upper and lower shoulder, this is probably the mistake you are making
The upper shoulder is all the way near the spine, is where you get the Boston butt from and is used to make pork roasts and pulled pork
The picnic is lower down, and the picnic ham (also called the pork shoulder) comes from the part the leg bone runs through, just like the regular ham
The butt is a white/gray meat, kind of like a pork chop
The picnic is pink, looks and tastes like regular ham
The ankles also have that pink meat that looks like ham, but usually a little darker pink when you cook it, slightly tougher and slightly more aggressive taste
