The third attempt.

Just seasoned this beauty and put it in the fridge. I will cook it in a few hours. Several of you told me that the steaks I was cooking were too thin, so I bought a thick one.

nope this is bad advice. You want the steak to be cold af so that by the time you get a sexy dark crust the inside hasn't overcooked. In fact I prioritize this so much when I cook a steak that I will sear one side for 20 seconds then remove the steak from the pan entirely to cool back down. Therefore I leave the inside barely cooked and he outside of the steak takes most of the thermal energy. This also gives time for the pan to come back to temp for the next side. You can get a deeply caramelized crust out the outside and blue going onto rare with this method. This method also gives you results that I find are similar to how a sous vide steak will have a thin crust and then edge to edge doneness.
