I'm not a vegetarian but I'd like to run a vegetarian restaurant because most restaurants suck at preparing vegetables well. They try to mimic meat or serve it as a salad/steamed. I'd specialize in hearty vegetables - eggplant, mushrooms, squash, zucchini, etc, and cram them up my ass.

It's a burger joint. All of the waitresses are very tall (at least 6 ft). They treat you rudely and bully you. If you back talk, they spit into your food. Like, right in front of you. Also they spit on you as well. You have to pay 30% tip and if you don't they beat you until you do.

My dream restaurant is first a distillery / brewery. They specialize in meads and gruit and avoid using estrogenic hops in all their brews.

They primarily serve all you can eat slow roasted pork, seasonal fruits / pies, salted fish, smoked meats, and cheeses. They have stews and breads as well. Everything is in the style of an ancient mead hall.

Small place that has a different menu everyday. Lunch is like meal set options, and one of them is a salad. Dinner is the same way. No appetizers just a fresh baguette and good butter for the table. Drinks would be water, tea, coffee,, wine and beer matched to the dish, fruit juices, and coke(but no other soft drinks). Bread, butter, and a pitcher of ice water will be at the table when you sit.

Lunches and dinners are two different prices, but the price is the same no matter what you pick for lunch or dinner. So you go there knowing dinner will always be X per person.

No tipping and the wait staff leave you alone after seating you and handling the drink order. You use a button at the table to summon them.

I would like a small place where I could experiment with weekly menus. For regulars or new folks I'd keep a few standard items like a burger, pasta primavera, salad, and falafel. But then I'd switch up with a weekly selection (maybe monthly to keep the supply chain / cost more steady) where I'd make one item with two or three different flavor options: Pizza, hummus, fried rice, an omelette, pie, quiche... whatever strikes my fancy.

I'd do lunch and dinner, 'cause I'm not a morning person. I always thought an option of ordering ahead for a pickup lunch would be a nice option. Something like, you pay for a weeks worth of lunches and I'd give you a re-usable container, then discount your next pickup if you bring it back.
