My dad's literally an off-the-boat Cuban, we've never used Cholula in any of the traditional dishes we've cooked, nor do any restaurants near me have it either in their food or on the table. What spicy Cuban food do you even eat? Most of the shit is mild at worst.

i hate hot sauces, everyone of them i've tried has been fruity/sweet/acidic which absolutely repels me in sauces
but i do fucking love chilli pastes which are just chilli flakes and oil. i've been eating an italian one most recently and next up i wanted to try the chinese one. but being in eastern europe, it's hard to find. i finally went to the one chinese ingredients store we have here and the only thing similar to lao gan ma i could find (the label didn't use the term "lao gan ma" was some chili paste with beef stock or beef flavor or something. i think it had peanuts in it too, so i didn't buy it. can anyone help me identify that so i can read more about it online?

Pour you favorite sauce into a blender or food processor. Add a small amount of Xanthan gum and blend. Add as much as you want in small amounts until you have the preferred consistency.

I know exactly what you mean OP, and actually did a taste test myself of several hotsauces.

I would heavily recommend Louisiana hotsauce, it's both quite thick and delicious. If you want a sauce similar to tabasco but thicker, buy this.

It's cheap too and essentially available everywhere, so just buy it, it's usually less than $2
