I grow peppers and ferment my own hot sauces. my go-to is usually something like habanero, orange/yellow bells, and lots of garlic fermented for 3+ weeks, blended with peaches in syrup and pasturized.

non hot sauce I usually have a jar of "cilantro crema" which is greek yogurt, a bunch of cilantro, garlic, lemon, s+p blended together. great on pretty much anything.

el yucateco black label is the one you're looking for amigo, it builds the intensity bite after bite, but it's not going to burn your face off and the smokey flavor is very indulgent

it's not sold everywhere, but you can get it online for sure, you may also find it in some aeropuertos in México and of course in Yucatán

I only ever buy soy sauce, mustard and mayo. First 2 take to long to make and we have excellent local producers anyway. Second one I rarely eat, if I make it myself I have too much leftover.

What kind of meat? I love chicken with lemon and tarragon sauce on a hot summer's day. With steak I prefer green pepper sauce. With liver I prefer candied fruit or sweet red vinegar. With roe deer I prefer port/Cognac sauce.

4 tbs vinegar

1 bulb garlic
