What I've never understood is that people say the fat gives it flavor but then eat these disgusting uncooked ribeyes that are cool red where the fat is globby and uncooked and the whole thing has a gelatenous consistency; it's honestly disgusting. I can understand cooking something like filet mignon medium rare, but ribeye cool medium-rare is just gross.

Whereas if you cook your ribeye a bit more "caveman style" on something with an open flame or with a lot of heat and cook it to medium or even medium-wellish with a warm pink, it has a lot of char and the fat renders down, it gives it a very satisfying and rich meaty, fatty flavor with a much more rough and meaty mouth feel.

I actually like to cook mine until it has a good bit of char (that many would even consider burnt) and then I don't even cut it, I just eat with my hands whole.
