I dump out 90% of the broth when I make Ramen. I want the noodles, the broth is a sauce at most. I think the flavor is subtle and delicious enough without having to mix in two additional tiny-meals into your bowl. I want a consistency in texture and flavor in my noodles which that shit on top absolutely does not provide. What does the fish cake add into your Ramen experience? It takes you out of it, it reminds you you're not eating noodles but a smorgasbord you poured into a bowl and covered in broth. It's a chore to remind yourself to eat everything on your plate despite the lack of consitency, to pace yourself with the mixture of random sideshit in between bites of noodles.

This. Everyone glamorizes Japanese cuisine, most of it is just deep-fried meat, vaguely pork flavored soup (ramen), or some vaguely fish flavored thing (Sushi, miso, etc). I do shoyu with a little miso in the tare at home.
Stupid easy if you use instant dashi and has a relatively neutral taste that pairs well with anything you throw in.

Fuck it here's the recipe:
Broth
>Dashi
>Vietnamese seasoning sauce
>Tamari (about half the quantity of seasoning sauce added)
>White pepper
>Dried shiitake
Simmer that shit until the mushrooms release those juices

Tare
>Sake
>Brown sugar
>Dark soy sauce
>Rice wine vinegar
>Veggie broth powder
>Garlic
>Ginger
Cook garlic and ginger till aromatic, add other ingredients and reduce until it looks right. I've been doing it in the microwave lately because I can't be bothered to wash yet another pan.

Cook your noodles and ready your other stuff (scallions, fried tofu, fishcake, seaweed, wood ear/black fungus, bamboo shoots, sliced jalapenos, whatever). Slam it together with the tare in the bottom, topping with some chili or sesame oil.
This entire process takes less than 30 minutes and results in some tasty-ass ramen.


That said, when I go to a real ramen place I get tonkotsu.

As the other anon said, sliced roast pork is the traditional meat, but you can put almost anything in ramen. Leftover steak, grilled chicken, bits of smoked salmon.
It's important to cook the food separately for most types of broth because you don't want it to come to a boil or you'll lose aromatics.
I've gently simmered chicken in ramen before, but there's not much reason to. Better to just toss it in a skillet and get a good sear.

The instant noodle thread died, but I'm sure there's some overlap so I'll post here anyway. Just tried this and I'm pretty happy with it. Everyone said it was too spicy, and maybe that's the case when you're chugging the broth at the end, but it was the perfect spice level on the noodles themselves. Only complaint is I would like more vegetable bits or a version with meat bits.

I was thinking of going full weeb over the weekend and buying some jap liquor or jap candy, just need to decide if I want to spend the money. Any good Japanese candy or snack recs? All I really know is pocky.
