The chef I learned the most from always laughed at people having "secret recipes", and would write out a recipe for a sauce or whatever anytime a customer asked (if he wasn't too busy). Most recipes don't mean shit if you can't cook, because of that little caveat at the end that says, "season to taste". Having a good palate, lots of experience, and just being quick on the uptake will trump the best recipe book (or youtube video).

I grew up in Northern California where sushi and Asian food in general was plentiful and delicious, now I live in a small town in far in-land Texas. I have a higher end grocery store that sells 7/10 tasting sushi and sashimi that varies in appearance between 4-8, yet every sushi restaurant in town sells 9/10 appearance sushi that gets maybe a 4 in taste at best.

I get that it’s a cultural difference and I guess Japanese culture places a lot of emphasis on the honor and pride of the chef but in practical terms the quality of the ingredients determines the quality of the product, assuming the chef is at least halfway competent.

I mostly agree with you, if you have good fish and are somewhat competent, you'll have decent sushi

However, what makes a good sushi place consistently good is not only the access to good fish, it's how well they can make the rice. I have had great fish on mediocre rice, and it does make a difference. the fish is the star sure, but if the backup singer is shit then it kinda ruins the concert. Sushi chefs have more control over the quality of the rice, and if the rice sucks, then they suck. this is why traditional places make apprentices work on rice for so long
