I'm trying to replicate the taste of curry served at curry houses in LA and I can't quite seem to get it. I followed this recipe: https://www.epicurious.com/recipes/food/views/japanese-style-curry-karei-raisu

and while it was good it didn't taste like it does at curry restaurants. Any tips/brands? I also tried S&B curry and hated it.

Tried Java too. It was good but didn't taste like a restaurant. I'm shocked at how different they all taste, yet none have come close to a curry house.

I realize I probably have to make it from scratch, but I'm just looking for something that comes close.

I'm really like the curry in Mitsuwa's food court too, but I can't find any recipe or anything to match it or Curry Houses' flavor. I thought for sure that the Japanese Iron Chef would be closest to what I wanted and now I'm just completely discouraged.

try using unsalted chicken stock, add mirin/sake and soy sauce to the curry. adjust thickness and saltiness with the stock.
some even add a small amount of nip's worchestershire, or chocolate

That's the thing. I would love to experiment after I find the taste I'm looking for. I don't have the most sophisticated palate, but the restaurants curry doesn't taste like it had any dairy in it. I can't pinpoint the spices/roux they use.

I bought Java curry at a Tokyo Central sometime last year before the pandemic. It's good, but it doesn't taste like a curry place. Mixing it w/ Vermont might work though; Vermont definitely has that sweetness.

It tastes good to me, i like chicken coconut curry, I used to make it from those glorified bullion kits that look vaguely like a chocolate bar.

Now I just add spices to taste. Soy sauce, tobasco, red curry paste, yellow curry spice, corriander. Ginger paste, minced garlic onions... oh im getting hungry.
