Paulaner isn't great and if you're going for Bavarian beer, don't buy Pils. Pils was invented to be mediocre and cheap to produce and it's more of a thing in Northern Germany.
Best Bavarian beers that might be available internationally are Augustiner, Tegernseer and Weihenstephaner. (Many people dislike the taste of Augustiner though)

Someone who defines themselves around their consumption of a substance probably has some internalized culture around that substance that influences their perception and appreciation of them outside of face value. Other examples are USA IPAs or Belgian Trappist Beers.

Look up the history behind Pils, it was literally supposed to be a cheap beer for the masses because the citizens of Pilsen were rioting against the city's bad beer (and the guy who invented it came from Bavaria even)
And I don't mean mediocre as an insult here, it's just a sort that is a lot easier to get right than Helles or Weizen for a brewery

Helles is a much easier style. It's just a sweet lager with like no hops so the beer can't even taste bad. Pils is easy to fuck up, because of all the hops. Especially if you use cheap ass hops.

All big breweries implement some form of quality control, perhaps even blend the batches.
The title of undrinkable is reserved for small local breweries that fuck up a batch and still bottle it.

Hops is like seasoning, of course you can put too much salt in your soup and fuck it up, but if you're no idiot, controlling the taste of heavily-seasoned stuff is a straightforward experience
Mediocre Helles will just taste bland and tasteless while mediocre Pils will taste fine enough
