Not really, it was mostly a lack of resources. When you're starving you don't waste money on spices and frills when you can put more toward calories. Then in the post-war boom, expanding refrigeration, food preservation, and new entries to the food market led us to wackadoo shit like aspic or jello everything and mayo everything and all that.
