It has taken me nearly 27 years to try "plastic" cheese out and I'm in love with it now. Why do so many people hate this shit? When it comes to a cheddar-like cheese this is now my go to rather than the dry stuff they sell in delis.

However other cheeses can also work well. In fact you can even caramelize the edges of the cheese and keep it melted on top. Edam or emental would work and still have a mild flavour. Properly browned cheese is a hell of a flavour though.

It's good for melty applications because of emulsifiers or some shit, sodium citrate. Makes it melt without breaking. They put excessive sodium citrate in the cheese slices, so the best is to put a slice of American cheese along with a slice of something flavorful that doesn't melt all that well.
