MSG is just an amino acid with an added sodium on it. There’s absolutely nothing wrong with it and it’s added to all sorts of food you’re already eating and you just don’t know.

The reason MSG was given such a hard time is that it was discovered in Japan and used in asian cooking long before it was accepted in the west. So some people were suspicious of the ingredient and blamed it for the bad feeling you get when you over eat carbs. That’s when the anti MSG stuff began. Over a bullshit anecdote.

The nice thing about MSG is that it is umami without other flavours. Of course it's nice if one of the ingredients in your dish has umami, but MSG is super useful if you want to eat an umami filled dish without needing to also add mushroomy, cheesy, fermented flavors.
I love all those things but sometimes I want to focus on other aromas while still having a baseline level umami in my dish to make it satisfying to eat. In the same way it's possible to add sweetness with caramelized onions, or honey, or whatever, but if you aren't looking for those tastes to be added to your dish you just add neutral sugar.
