When he got permission to open one up in japan he realized how inefficent tge american store was. They sold everything but because of this many items would go months not being sold. Bread is a regular thing there (loved yakisoba pan, curry pan and in autumn/winter the various meat buns). Ramen, riceballs, etc. were standard lunch choices. I live in Japan and people here genuinely think that corn on pizza is delicious and some sort of hidden italian delicacy. People here are really fucking nuts about italian food but can never remotely cook anything like it. then get dashi, cooking sake, bonito flakes, kombu if you can get those.
then in your typical asian supermarket you should be able to find japanese condiments like Shichimi (Japanese 7-spice Chilli powder) and Sansho (mountain pepper).

If you cant get any of that stuff, the SaShiSuSeSo will sort you out and you can make your own dashi pretty easily. Thats why a lot of Japanese food tastes similar but has a bigger focus on texture.

I made Japanese food a few times, kinpira, various soups, tkg, oyakodon, various forms of takikomi gohan, teriyaki, and pickled vegetables. Some issues I have is finding ingredients like ooba, mitsuba, even actual Japanese ryourishu (which is salty, not sweet) is kinda hard to find and I'm substituting with Chinese cooking wine right now. Also the fish they use, as well as the cuts of meat are very different from what you can get in the West, so reproducing recipes is actually pretty annoying sometimes. The only Japanese dish I make regularly nowadays is lightly pickled cucumber, just marinating slices in soy sauce, mirin, sesame oil, and an acid in the fridge for a few hours. I ended up getting into Chinese food more, because it tends to be easier to find Chinese ingredients. They also eat more meat in China so it's easier to fit into my diet since I work out every day.

Dishonest post but honest about the poverty of most meals being almost entirely carbs with some vegetables. Anyone saying Japanese food is cheap is delusion af. Skeletons and whales wouldn't understand since they eat like garbage or think restaurants with small portions or a dish with 70% rice is an honest metric.

The bread and cheese really suck there too if you don't like fluffy white bread and American tier cheese. Eating real Japanese food is the only option, ethnic food that isn't Asian sucks too.
