A steak needs to cook on at least each side for 4/5 minutes, not to mention they have to take the order, put it into the system, the chef has to finish what he is doing, read the order, go get the ingredients and mentally plan it out. 30 minutes is not an absurd amount of time to wait unless you're the only one in the restaurant.
