The answer is convenience. Look up "food deserts" - it's a thing in the US and UK.

Every kitchen has 2 types of cooking: cooking for the mouth and cooking for the purse.

French cuisine is all about males 1upping each other in the luxury department.

Italian cuisine is all about moms trying to feed 13 kids on 1 dollar and with 5 minutes time - they call it Slow Food - food that needs time to grow but is ready in a minute.

Anglosaxon Protestant market vultures drained both principles by adding lots of cheap flavour (vinegar, MSG and sugar) to forced-grown meat and vegetables with 0 taste and nutrients.

The result is threads like "what's the best fast food chain?" on 4chan.

While a fresh pasta with mussels takes way less time and money than a drive to MacD.

I worked at a restaurant that had an 'umami' burger. Sounds pretentious as fuck, but to this day, I've never had a better burger. Couldn't even name what was in the mix, but the topping were these sauteed, earthy tasting, mushrooms and finished with shaved truffle.
