you have to work with what you have. adding a bit of sugar to canned tomatoes can get you the best tasting sauce in the middle of winter for instance.
if youve got high quality fresh tomatoes during the growing season, by all means use those.
supermarket tomatoes in the off season are not good. theyre not overly tart, they just dont taste like much of anything. canned, even if theyre slightly acidic, is still a much better option. especially if youre willing to add a little sweetener
you can even get sweetness from a different source; simmering an orange peel or grating in a carrot, for instance

I use canned tomatoes for pretty much any sauce. I use San Marzanos if I'm making tomato sauce. The flavor is much richer and more "tomato"-ey than the shitty flavorless canned tomatoes from my grocery.
