Chicken that isn't half saline and hormones has a taste and is quite pleasant. If you can't pick up on that I'm questioning the efficacy of your taste-buds.

Good question anon. I simply got fedup with handling so now all my dough is kneadless. I whip it with a metal spoon, high hydration, let it sit for a bit, salt, sit another bit, then use same spoon to put it in the pan. Zero direct manipulation of the dough, thank fucking god.

This one has short sitting time though, should have been more bubbly, i was too hungry to wait more, still came out decently.

i cook on a stone, so using such wet dough is new to me, but its clealrly the key to good Neapolitan pies
