Bitterness is a failed tasting note due to shitty over roast/over extracting or bad grind/instant coffee/shitty origin like Colombia (yes, I said it). Some bitterness accents some types of beans while I sure as fuck don't want it in others. So is vegetal, sour, and a bunch of other flavors. You won't understand until you've had good coffee, some tastes like lightly sweetened hot cocoa and a proper Ethopian like berries or fruit. I can drink my daily driver Guatemalan single origin 1950M elevation beans black with no sweeteners and love it, but you give me the usual instant or shitty super market trash the average person chokes down and I'll need 35g of sugar to make it drinkable in a 470ml mug. Can't stand the shit.

Same thing with wine but not as versed in that, expensive reds can taste like shit but there is clearly a difference between that overpriced earthen trash and babbys first $14 White Zinfandel Rosé that tastes good. Got "Pacific Rim" blend from sprouts that was labeled,"Deep, full, earthy and floral notes". Its not bad, its like a better version of whatever "regular" flavor coffee blend most coffee places offer. Some Colombian stuff I got off eBay, it's good, still haven't got a hang on how to properly roast the stuff but it gets gone quick, kind of difficult to keep up, even with a Moka pot. Nice, how do you plan to cool the beans? What I did was dump them into a chilled colander and shake/stir them until they were cool enough to handle. That also reminds me, when you first dump your greens into the air popper they will be too heavy for the air to agitate so to avoid having the beans on the bottom burn you'll want to stir them until they've lost enough moisture to be moved by the air, usually this is from 1:45 to 2:15.

I am using moka pot and the coffee is ok but not great. No wonder because the device itself is pretty retarded if you think about it, it just runs hot water through the coffee at comical pressure. Nespresso machine process is technically better for sure, on the other hand you have to use capsule coffee which I am highly skeptical of.

I made the Dalgona meme with instant Bustelo that was on clearance. Did 1-3-3 ratio Hoffman did; 6 grams of instant coffee. I thought the bustelo instant was going to be at least 100% arabica... it is not. It's like roasted cardboard with bad robusta flavor. Mixing the milk in helps a lot, but its.... ehhh. Made concentrated coffee in my french press with that Sprouts "pacific rim" blend, then heated up milk with dash of heavy cream, bit of sugar, and generous almond flavoring, frothed it. if you're doing coarse grinds then a handgrinder wont be too annoying. also, that faggot recommends the Fellow Ode grinder which isn't expensive at all.
if you're doing espresso grinds, you really need a quality grinder if you want it to come out somewhat decent. Theres the DF64, Niche, and eureka mignon on the cheaper side of things.

After a day of rest, the edge of the full city roast comes off this one. And oh my goodness. I ranted about it a little bit last year. I used to work in Vancouver in a Bean around the world, and my boss knew a dude who owned one, and he used to add heavy cream to his milk. He also never tamped his coffee so...
But I tried out adding cream as per his ratio in my shop, just tased greasy, shit was fucking nasty. I had to really try and talk my boss out of doing it, she thought that because he had a line constantly, it was because of his milk.
But this shit is amazing. It's creamy, but not heavy. And apparently, the guy who opened up the original Bewleys in Dublin had his own heard of Jersey cows and used their milk in his cafe in town.

Grind it coarser, increase your dose, and use a little bit more water. If you just keep going finer and finer, trying to find something interesting, you'll eventually just get all of the oils that will wash out any residual flavours.
On the flip side, if you brew too short you'll get alkaline and acids. Just fuck around with it.
