My wife is asian, rice is apparently mandatory at every meal. Rice 2-3 times a day depending on whether we have proper breakfast or not. Then, if there is left over, we re heat and just eat again next meal. Two years of rice every day. What can I do with arbitrary amounts of leftover rice other than heat up and eat again plain? Throwing it away and not having so much fucking rice is not an option, even if it should be.

it is very low cost, and if your wife is indeed Asian, she is buying it on giant 20lb or bigger bags, making it pennies a serving. It is cooked in free water, so stop just making it a thing on your mind as wasteful. Additionally, there are spores in rice that last through the cooking process, and become food poisoning levels in leftovers more than 1 day old. Bacillus cereus. Look it up. My leftover rice is not 24 hours old when used, but like next morning, 18 hours, and it was packed away very cold immediately after cooking.

I use leftover rice in fritters, like chop up some green onion, bell pepper, combine with egg, bread crumbs or cracker crumbs like matzo, some parm, and stir into the rice, pack into patties or logs, dredge in flour or more breadcrumbs, pan fry on each side. Arancini is the italian name, but you can use whatever flavor profiles you want with the herbs and cheese, from Everything seasoning, za'atar, to smoked gouda, to dill and salmon, all of it works. The more browned the better.

Fried rice of course, ham steak cut into cubes or leftover roast, fridge or frozen veggies. If I have some cilantro in the house, I might hit it with jamaican curry powder to taste more like Singapore noodles, might even put in some hot mango chutney in there for more ginger oomph.

Heating rice up is okay by me, if I am looking forward to topping it with some laoganma, or a local version I buy which has more roasted garlic, or Indian birista.
Cuban moros. Fold in lime and cilantro like Chipotle

Fresh lemon in the house? Or sick, then I might make Greek soup avogolemono, which has a fun thickening egg yolk step, add rice at the end.

Jambalaya, and dirty rice can be made as one pot skillet meals, but it actually is best when the seasoned meat is folded into already cooked rice, not cooked together in the same pot. Ground sirloin, all the trinity and cajun goodness, simmered in bay leaf, garlic, chilies, liver.

I do it all the time, if you're lazy you can just microwave it in the container you fridged it in. Just add a little water (roughly the amount that condensed on the top) and microwave until steaming hot again. Almost as good as new.
Of course you also have the option of fried rice if you're feeling less lazy.
