I'll honestly laugh at this even more now because any Italian worth their salt should make fresh pasta if they are making noodles. Ten minutes for initial knead, 30 minutes rest, roll through pasta maker, and boil for 5 minutes tops. They wouldn't have to get triggered if they didn't use dry noodles lol. Anything besides extruded pasta should be made fresh.

Fresh and dry pasta have different uses, it's not like one is superior and the other should never be used.
