I don't season the outside of chickens because it burns, but I rubbed the underneath side of the burd with rosemary, garlic, black pepper and coriander seeds. Made some slits on the breast and thighs to get the stuff into it. Then I rubbed it with salt underneath and on the outside.

The breast was incredibly dry, as I over cooked it. Turns out, there was no need to cook for 30 min covered and the brown the skin. The thing was almost done when I pulled out the first time.

Mashed potatoes were incredible: butter, salt, milk and nutmeg.
