I don't think most people actually understand what well done is, it's actually very hard to achieve a perfect well done.

It should still be somewhat juicy, but there should be no pink remaining on the inside
it's best to achieve this with more fatty cuts obviously, since the slightly longer cooking time also helps to render more of that fat

but for some reason most people mix up well done with overdone, overdone is dry, bland and juiceless

If nothing else, the French are famously uncompromising when it comes to things they produce. They will not let Bordeaux wineries be bought out by Chinese firms, and have their way of doing things because they've been doing that for centuries. They have developed thier way of making bread and they continue to perfect it over time, not degenerate it in the name of the lowest common denominator. that's only true for cuts of meat rich of collagen and connective tissue cooked for a long time at a lower temperature in a relatively humid environment (beef stews, low & slow BBQ...). At that point collagen melts and meat become more tender.
But you can't make typical steak cuts (tenderloin, sirloin, rybeye...) any more tender by cooking 'em longer on a grill or a pan. Proteins contract and coagulate and squeeze all the juices out.
Science has already figured out pretty well how the cooking of meat works on a molecular level, you can't make things up just to try to rationalize your shitty preferences.

A roast cooked in the oven is basically a very thick steak, so it's really hard to actually overcook it until it becomes inedibly dry and tough. The large section also help retaining the moisture inside.
If you want a well-cooked piece of beef tender like a pot roast you have to basically make a pot roast, and ribeye is not really suited for that. There are cheaper cuts of meat that give a way better result.
