Why is salt and pepper universal across all regional cuisines? Are there any other spices that should be in everything?

>> No.15938620

If there was, it would already be so. Your question is retarded.

i often replace salt with soy sauce and pepper with chili of choice but these are still fundamentally salt & pepper in different forms

I dont use pepper a lot. And salt is no spice, its NEEDED if youre not completely carnivore drinking not even water.
Other spices hm nah, tomato paste for example is nice but should not be in everything

I feel like cinnamon/nutmeg and garlic are pretty universal as well. maybe paprika or chili flakes too.
Personally I think more people should use fresh basil and oregano, they make every soup/pasta/salad better

>garlic are pretty universal
In german cuisine literally nothing is with garlic, i did search for garlic in an old cookbook from 1900 around and it was found in two reciepies out of 800 or so. And it was warned to not use much to make it inedible. Not too surprising i hate garlic over everything.
Also its literally toxic and all health claims are fake.

>>15938617
Garlic is pretty useful, but still not to the level of salt or pepper's near universal usefulness.

Imagine a nice thanksgiving spread, full plate in front of you. You could easily put salt or pepper on probably 80-90% of the stuff that might be on your plate. Garlic might be lucky to be used in half that same stuff.

People used to think tomatoes were poisonous too, bc they're a member of the nightshade family...... If you don't like garlic, then good for you, don't eat it. Don't project your autism on the subject to others.

Salt is like fat in that we're hardwired to naturally want it since it's useful for survival.

Does black pepper have some kind of vital nutrient or vitamin that makes it taste good in stuff?

Pepper really isn't. You see the shakers everywhere but they just don't really suit much of anything I would eat in a dining establishment where I would find them and don't need to be refilled often because I figure people don't use them nearly as much.

>Though French and Italian cooks make abundant use of black pepper, not everyone does. In Morocco, shakers of cumin are commonly set on the table along with salt. In Turkey, it's usually some form of ground chilli powder. In many Middle Eastern countries, including Lebanon and Syria, it's the blend of dried thyme, oregano, and sesame seeds known as za'atar. In Thailand, sugar can be found alongside chilli paste, while in Laos, guests are often brought fresh chillies and limes. It doesn't make any more sense to automatically season everything with pepper than it would to add cumin or za'atar to every dish you cook.

Black pepper causes you to salivate. Ever notice that food tastes better when your mouth is watering? The only downside would be if you don't like the taste of black pepper or you use too much of it. I use it sparingly myself.
