I've noticed that in older, especially but not just European movies, characters will often visit diners or restaurants alone and it's treated like a fairly normal thing, so it's something that has changed over time.

There's some truth to what >>15901336 says, and it has to do with urbanization and the change from a generally high trust society to one of very low trust, along with the death of smaller town communities.
The days of going to a place you heard has good food, becoming friends with the owner, maybe striking up a conversation with other people enjoying their day are mostly if not completely over.

Also in modern society people are more isolated. It's not an uncommon thing to see more people eating alone, when I go to a restaurant I usually notice at least a couple other people eating by themselves, naturally nobody really pays attention.

I think this might also be different depending on where you live ( I don't live in the states) and what kind of restaurant it is. Restaurants with a kind of urban, uptown vibe expect individual people, maybe that's different for family diners but that's largely a thing of the past, at least where i'm from.

When I was younger, I went to a lot of debate tournaments around the country by myself and often ate alone at nice restuaraunts. I was always either about to go or coming back from rounds, so I was in a 3 piece suit. I'd always read some philosophy book or equally pretentious literature, and the wait staff often took turns meeting me and asking me about what I was reading. Multiple times I was offered free desserts and appetizers because they were so enamored, but in hindsight, they might have at first thought that my date didn't show up.

Personally i'm an introvert so I prefer being by myself, a big crowd is better because I can disappear in to anonymity in the crowd. Neither one is better than the other and they are defined psychological traits, introverts and extroverts also tend not to understand each other, keep in mind that generally there are more extroverts than introverts in the world.

I'm so desensitized to eating alone in restaurants because I've worked in so many. I used to eat restaurant food all of the time; it's a very comforting and natural environment for me. I eat alone when I travel for work. I usually don't go anywhere super nice but a late lunch somewhere casual, small dinner and drinks somewhere with a bar.
Enjoying an hour alone should not be difficult.
I'm not opposed to eating somewhere fancy, I just typically don't. I can expense a few decent meals and a few drinks just come out of the cash I bring with me.
I'd be paying out of pocket for the nice place and I don't really want to do that.
