A good salted butter and unironically garlic powder. Garlic powder has a flavor more like roasted garlic, and a little bit adds depth evenly over all the rice without overpowering it. God quality butter has a nice flavor all on its own, but it's subtler than olive oil so you still taste at least a bit of the rice.

If you're adding enough soy sauce to sufficiently salt the rice, you're going to taste neither the complexity of olive oil nor the subtlety of rice.

If you want a salty soy-based thing to add to your rice, try whisking a small amount of white miso paste into some mirin to make a slurry, then thin it out with olive oil, and if you use garlic, either use a very small amount that is actually beaten smooth or used roasted or powder.

Because most of them that are marketed to non-Asians are utter shit. And even some marketed to Asians are still shit.

The vast majority of "soy" sauces you see have an excessive and overpowering amount of fermented wheat which gives a nasty musty flavor. But it's cheaper. If you want pure "soy" sauce flavor, tamari is the way to go. San-J is a decent commonly available brand.

The cheap shit is still fine for regular, day to day cooking, or applications where it's more complimentary rather than the main flavor.

Frankly, though, if you buy bulk, that San-J tamari is like $20 for a 64 oz bottle which will last you fucking forever so I just use that, supplemented with Pearl River for dark soy.
