I marinated the beef for 14 hours overnight in marmite, liquid smoke, apple vinegar and tar syrup with plenty of salt and pepper, smells utterly divine. Now I quickly cook for 10 minutes at 130c, then dry at 70c for about 4/5 hours hours

I make jerky in my apartment oven all the time and it comes out great. I drape the meat just like you do and I leave the oven door cracked.

I don't know what kind of access you have to other spices and sauces but it's a lot of fun to experiment with different stuff. My usual go to is some kind of bastard Asian marinade with soy sauce, ginger, honey, sambal and a fuck ton of garlic
