remember that until Western contact, Koreans didn't have chilis. So while it seems like the heart of Korean food, it actually came in rather late.
Some examples of dishes that don't rely on chilis include kalbi-jjim (soy sauce braised beef flanken ribs), samgyetang (herbal chicken soup), pretty much any jeon (meat, seafood, or vegetable fritters), classic tteokbeokki (chewy rice blocks stirfried with beef, colorful vegetables, egg, and pine nuts in a slightly sweet soy sauce), and bulgogi. But a lot of the instagram shit like bul-dak (chicken in fiery sauce) or fried chicken with chili sauce, or kimchi anything obviously is swimming in spicy stuff, making it more of a meme ingredient than something truly authentic to the roots of the cuisine.

I prefer it over Chinese or Japanese food too. It has more flavor and Korean BBQ is legit. Going to make some home made kimchi this week.
