smash burger
get a griddle ripshit hop
get ~2.5oz fatty (80-20) chuck in a ball
smack that shit on the lightly oiled pan, immediately push down to flatness with a spatula, or something flat with a dowel
let cook 3-4 mins while assembling burger and 'dressings', including toasting bun and preferably searing onions lightly
flip, apply cheese, remove after like 1 min or when cheese is melted (should be less than 1 min)
