I think this guy has it. Pizza in most of the US is generally too spongey and doughey, no crunch or crispiness. That's obviously more of a recipe problem than a minor factor like trace minerals in water problem.

NY has a nice thin crust that's hard to find outside of the area, but they're out there. CT has decent pizza as mentioned. I've also had decent NY style pizza in california, but califags never went there so it went bankrupt. Meanwhile the california pizza kitchen across the street is still going strong. Tasteless cunts.

Fun fact, NY's water supply comes from upstate reservoirs which were created using eminent domain. Decades later, the towns that were flooded and cut off economically to make the reservoirs to supply the city are still depressed shitholes where people hate cityfolk. I know a few people who 'allegedly' throw all of their toxic waste (lead paints, car batteries, etc) into the reservoirs any chance they get. Doesn't make a big difference given how large the reservoirs are, but in a sense, they are poisoned.

Qualities of the water was actually found to be worse for baking (acidity, hardness, mineral content) but the important thing to note is when these bagel and pizza traditions set up in New York they tailored their recipes to the water they had. So if you try a recipe from New York City somewhere else, it probably WILL be worse by comparison but that doesn't have to do with magic water as much as generations of chefs and bakers improving on recipes.
