Restaurant food is designed for a very different purpose than the home kitchen. Restaurants make large amounts of the same food every day, so they design recipes for that purpose. When you try to make it, you spend way too much time, effort, and money making the same damn thing, which feels pointless because it is.

Yes, and most restaurants don't use straight up msg these days. It's not some magic ingredient that automatically makes food good, and it's not something "extra" that will make good food "restaurant quality". We do add a lot of "umami" ingredients to dishes such as slow roasted tomatoes and Worcestershire, but we also add wine to almost everything and actually know how to use salt and fat and acidity. Many people say, "hurr, restaurant food is better because they load everything with salt and butter", but that's complete bullshit. If you've ever cooked anything you know damn well that adding extra salt wont do anything other than make your food too salty. We add the right amount of salt, which just happens to be more than most home cooks realize.

Restaurants have the thinnest profit margin of any industry in existence. The only scam is that there are people crazy enough to open and/or work in restaurants. If you don't understand the appeal of paying someone to prepare food that you don't want to/can't prepare at home and be served in a nice setting, then you've either never been out to a decent restaurant or just don't have any taste, in which case what the fuck are you even doing on this board?

Not him but I have been to my fair share of very nice restaurants. I still prefer my own cooking even when the restaurant made better food than what I can cook. I do not feel comfortable in any restaurant setting and I enjoy having a connection with my food.

I haven't eaten a strangers cooking in quite some time, and if I ever do again it will have to be something expensive like a good dry aged steak from a reputable steakhouse or dim sum from the best Cantonese restaurant within a 500 mile radius.
