Here's something I made, that I'm actually genuinely super proud of. I've been honing my grandma level pasta sauce recipe for several years now, and I finally made something I am proud of.

This is the one thing I have poured my heart and soul into, and while these measurements are written in a way that specifies exactness, only follow them roughly, please let god cook on this one.

1 Half Medium Yellow Onion
1 Half Container Tomato Paste
1 28oz Can Crushed San Marzano Tomatoes.
1 Cup Sweet White Wine
1 Small Handful Flat Italian Parsley
1 Small Handful Basil
1-2 TBS Dried Oregano
1 Half Stick Butter.
3-4 Cloves Garlic.


1. In a heavy bottom pan, heat a small amount of neutral oil, on medium heat and add your finely diced onion, cooking until just turning translucent. Once they do, add your half container Tomato Paste, and cook 3-4 minutes, stirring consistently.

2. Add your crushed tomatoes + 1/4th can of water, and turn the heat down as low as it will go while still just barely simmering, you are going to want to cook this down for about an hour uncovered.

3. Add your white wine and herbs alongside a sparing amount black pepper, and continue to cook, adding water, stirring occasionally and scraping down if necessary. Cook down for as long as you can stand it on very low heat, doing your best to let the sauce combine.

4. 20 minutes before serving, add your butter and crushed garlic, and let the cook down, add water to your desired consistency, making sure nothing has stuck, and serve.

If your sauce is too acidic, add small amounts of baking soda.

Secret Ingredients: Black Pepper, Anchovy Paste, Fresh Tomato.

Adding black pepper can add a fruity spicy kick to the pasta in a very minute amount that brightens your sauce and imparts a delicious homespun flavor to it.

Adding Anchovy Paste will not impart a fishy flavor but is packed full of MSG, Salt, Fat, and other delicious subtle flavors that will go great if added in the herb or butter step.

Adding a single fresh tomato at the beginning of the cooking process will impart a fresh spring taste to the dish and is absolutely crucial if being served at lunchtime.
