There are some pork chops that are darker meat, like pork shoulder steaks. You could use pork blade steaks if you want to get that luscious gelatin richness from the bone-in cooking (mimicing ribs), just pluck out the bones when done. They remove freely in well cooked (slow cooked) pork. OP can just baste them with Bulls-Eye, broil on both sides (or grill!). Hit your chicago sub rubs (or kaiser rolls) with thinly sliced white onion, pickles, dip your chop in more hot and reduced sauce, and it's the recipe.
