A very good 8inch chefs knife and paring knife will run you like $70, or you can buy used ones from a goodwill or thrift store for sub $20. A combo whetstone will run you maybe another $20.

Your 3 fucked up toe knives look like a nightmare to prep with. Why not spend a tiny amount of money to buy a decent knife or two and something to maintain them with.

If you are a professional then yes, knives matters.
If you use a knife for 10 minutes a day to cook dinner then in almost every situation, a cheap serrated knife will do the job and anything more than a small fruit knife, a bread knife, and a few different sizes of regular knives and a simple manual sharpener will do the job.

The issue here is your definition of cook well. I'm sure you can make something edible with a rusty spatula; that doesn't mean your vegetables will all be cooked uniformly as they're diced to mm precision, your herbs won't be bruised to shit and your meat won't be torn to shreds as you hack your way through it.

Presentation isn't everything, I half agree with you that something ugly can be delicious, but the reason for proper cooking techniques isn't just about appearance. You're a cooking midwit at absolute best.

St John is pretty much the restaurant that defines modern British cuisine, and it's nothing complex really. Short recipes that are pretty fool proof if you follow them.

Get a mercer renaissance or victoranox chef knife or grab a santoku/bunka of the same brand or go to China Town and get a thin and thick cleaver.
If you really want Japanese just make sure you can care for them and know what food you can cut with the knife you pick because almost no Javanese knife is good for boning or scraping bones.
Just grab a $5 victoranox petty and a decide on if you want a stone a dimond rod or a automatic sharpener.

Serrated knives are a poor choice for almost every type of food, particularly in prep/raw food. A strong backed sharp knife (chef's knife style is typically used) will provide cleaner and more stable cuts on almost everything you will regularly prepare. The only serrated knife I really appreciate is for bread.

Knife I use is from the 80s. It's one that stores in a sharpener. Blade is getting shin enough I've looked at new ones but they don't feel right since the blade sticks out deeper than the handle. Guarantee if I buy one it will end up having no tang and being garbage in 5 years.
