I dont know it fucking sucked when I worked in Vietnam for a few months. They always used those shitty plastic kid seats so if youre not 4 feet tall its awkward as fuck to eat. Bad shits once a week at least. Often one of the locals would go look at where they cooked to see if it was too shitty. That being said some of the best chicken I've had with it often being slaughtered that day (or hour) right at where they cooked it. Shame about the dog restaurants though. Always fucked me up seeing dogs in a cage outside one of them knowing their fate.

Street food culture is different between countries, and even areas within those countries like China or India.
Vietnam is much like you say: food for hungry workers.
