If I buy a block of cheese or a pack of sliced deli cheese I have to use the whole thing within a week and buy more

If I buy 3 double packs of kraft I have something I can cook over patties, chopped ground beef, chopped steak on hand whenever I need it

also my dog (rottie) doesn't mind eating them and he is actually a picky eater and won't eat mediocre lunchmeat / hot dogs and real food that has too much vegetables

Depends. In theory American cheese is just cheddar cheese with a emulsifying agents and sodium phosphate in it. It actually historically has been very popular in Europe and Kraft used to sell more in the European than American market.
However this is most likely whey proteins and oils.
