OP you arent going to get much flavor out of those plain as hell champignons at all, without browning them fairly heavily first.

soup will taste only somewhat "fungal", rather than "mushroomy" in a tasty sense.

With that done, I added about two tbsp of flour to thicken, cooked it for two minutes, then poured in 3 cups of chicken better than bouillon, and the mushroom juices from before. Also two cloves of garlic and some thyme. Now to simmer. See you in an hour fags

thats why you do it very fast over high heat, it takes maybe 2 minutes then. i looked up the recipe youre using and he cooks them for ages and evaporates the water which just isnt necessary. next time try browning them really quick, just dont use normal butter use clarified butter another animal fat or a vegetable oil with a high smoke point and get the pan very hot. if you want the taste from the milk solids in normal butter you can turn down the heat and add it after sauteing the shrooms.

Tastes good, I’m pretty happy with it. It’s nice and mushroomy. Very rich. I think next time I’ll up the shiitakes and brown them a bit more. And maybe a teensy bit more thyme.
